Nancy Baggett is the author of 16 cookbooks, including four that have garnered “best book” nominations from the International Association of Culinary Professionals and the James Beard Foundation. She is most well-known for her beautiful baking books but has been a contributing editor for Eating Well magazine for many years and has collaborated with Ruth Glick on a long list of healthy-eating and special-diet books. Together they created the recipes for the American Diabetes Association’s One-Pot Meals for People with Diabetes; Prevention’s Healthy One-Dish Meals in Minutes; Surrey’s Skinny Soups; and Rodale’s popular 100% Pleasure: The Low-Fat Cookbook for People Who Love to Eat. Their very first cookbook together, a Times Books title called Don’t Tell ‘Em It’s Good for ‘Em, won a “best healthy cooking book” nomination from the International Association of Culinary Professionals and was featured in Family Circle.

A frequent television and radio guest chef, Nancy is a long-time contributor to The Washington Post food section and has written recipes and stories for many other national publications including Cooking Light, Vegetarian Times, Better Homes and Gardens, The Los Angeles Times, and Country Gardens Magazine. She is also a food photographer-stylist and created all the enticing images in The 2 Day a Week Diet Cookbook. She follows the 2-day-a-week regimen using the recipes in the book and is down to her lowest weight in more than fifteen years! Visit her blog: http//www.kitchenlane.com

A New York Times and USA Today best-selling author, Ruth Glick is known for her more than 100 romance and romantic suspense novels, written as Rebecca York. In addition, she has authored fifteen previous cookbooks, many with Nancy Baggett. Because of Ruth’s focus on healthy eating, her expertise is in writing low-fat cookbooks for such publishers as Times Books, Rodale, The American Diabetes Association, and Surrey Books. 100% Pleasure, written with Nancy Baggett for Rodale, was named as one of the 12 best cookbooks of the year by USA Today. Her Snack Munch Nibble Nosh Book was a best-seller for the American Diabetes Association. She is also the author of Fabulous Lo-Carb Cuisine. Her food and nutrition articles and recipes have appeared in Diabetes Forecast, Family Circle, Weight Watchers Magazine, and The Washington Post.

After learning about the 2-day diet, designing some suitable recipes, and starting to lose weight, Ruth wanted to share her excitement about the eating plan. She teamed up with her longtime cookbook collaborator and friend, Nancy Baggett, who not only contributed recipes but took the stunning photographs for the book. At this writing, Ruth has lost sixteen pounds and looks forward to shedding more.
